Since joining WW I've tried to go out of my comfort zone a little, forcing myself to try new things. One of those was trying new recipes. I have to say, this recipe from WW was really easy to make, was super fast in the oven, and tasted great. And as someone who hates eating breakfast, this was a fast and easy way to get some nutrients into my body early in the day (it paired really well with my coffee!). Bonus: it was gluten and dairy-free AND my kids loved it (probably because of the chocolate chips). CURRENTLY on my mind...
Feeling: A little bit anxious, a little bit like I need to get on the treadmill to get my butt moving, and a little overwhelmed with being cooped up in the house. We are on day 31 of quarantine/self-isolation due to the COVID-19 pandemic.
Cooking: For lunch I'm warming up leftovers from our Easter dinner (chicken cutlets and rice). Tonight it's pasta with homemade sauce.
Drinking: Copious amounts of coffee...and wine...because we're in self-quarantine and let's face it....the only way to survive this with kids is to drink caffeine and wine.
Eating: ALL THE THINGS. Kidding. Still munching on the the kids Easter chocolates and trying to supplement it with healthy Weight Watchers (WW) friendly eats.
Reading: I just bought What Happens Now? by Sophia Money-Coutts. I haven't started it yet technically but I plan to this week!
Wasting: Time! I'm such a procrastinator!!! Also spring mix lettuce. Am I the only one who buys a box and then just let's it sit in the fridge until it's rotten and time to buy a new one? Rinse and repeat.
Wishing: That the COVID-19 pandemic was over so we could get out of quarantine/self-isolation and get back to normal. Not only do I want everyone healthy and thriving but I'm not going to lie...I miss Winners and Home Sense :(
Wearing: PJ's and comfy lounge wear. All day. Every day.
Procrastinating: Working out and cleaning the house. HELP ME!!!
