CurrentlyJen's Friday Favourites - February 25, 2023

I'm a day late for Friday Favourites. Which I feel like is basically my whole life these days...perpetually late for the important stuff (thank you anxiety), and early for the shit that doesn't matter.  Well, let's get right into it. My week was BUSY AF but I did manage to squeeze in a few moments that brought me joy!  Here's my take on Friday Faves...things that made me happy this week: It was Family Day here on Monday in Ontario (stat holiday). We spent the weekend filled with family gatherings, friend visits, dinners, movies, etc. So by Monday, we were all tapped out. The day was a much-needed pyjama and chill day for all of us. Those days are my favourite. Saturday night fun with the hubby I had to go to the office on Tuesday for my in-person work day. It was nice to see everyone but I was tired by the end. I don't think I'll ever get used to so much socializing again...how did I do it five days a week pre-pandemic?? I'll never know! In-office obligatory

Recipe Review: Skinnytaste Lemon Chicken and Brown Rice Pilaf

I'm always on the lookout for new and easy family friendly recipes and I really hit the jackpot when I bought copies of The Skinnytaste Air Fryer Cookbook and Skinnytaste One & Done....you can check them out on her website here (no I'm not an affiliate, calm down).

I've tried a few things from the air fryer book, but hadn't really dug in to the other one so last night I tried her "Lemon Chicken and Brown Rice Pilaf" recipe. OMG. It was so tasty. This one was made in a skillet on the stove and the ingredients were all things I (mostly) had at home. 

I say mostly because I had to substitute a few items. I left out the vermicelli, swapped peas for chopped carrots, and didn't have brown rice so I used white parboiled rice, and lastly, no fresh garlic so I used garlic powder and hoped for the best. Sometimes swapping out ingredients can really kill the whole vibe of the recipe, but in this case, I found it worked and I didn't feel like it was missing anything. I truly loved it. Adrianna (pickiest eater ever) loved the chicken and said she would eat it again. The boys didn't love it as much as I did, but they're not big lemon fans so I take their opinions with a grain of salt lol. And really, since I am the cook in the family, they have no choice but to eat what I make. I always say, if you don't like it, there's always toast or cereal. Deal with it bitches (I usually mutter the 'bitches" part in my head so they don't hear me...it makes me feel pretty badass lol).

Tonight I'm going to try her American Goulash recipe in the Instant Pot - I'm determined to get along with that thing...it's been a love/hate relationship from the moment I bought it. But that's another post for another day.
