WW and Trying New Things: Breakfast Cookies

Since joining WW I've tried to go out of my comfort zone a little, forcing myself to try new things. One of those was trying new recipes. I have to say, this recipe from WW was really easy to make, was super fast in the oven, and tasted great. And as someone who hates eating breakfast, this was a fast and easy way to get some nutrients into my body early in the day (it paired really well with my coffee!). Bonus: it was gluten and dairy-free AND my kids loved it (probably because of the chocolate chips). Peanut Butter, Banana, and Chocolate Chip Breakfast Cookies 2-3 Personal Points per serving  Serves: 16 Serving size: 1 cookie Ingredients Banana(s):   3 small, ripe Uncooked old fashioned oats: 1.5 cups Powdered peanut butter: 1⁄3 cup Table salt: 1⁄4 tsp   Mini semisweet chocolate chips: 1⁄3 cup Instructions Preheat the oven to 350°F.  Line a sheet pan with parchment paper. Weekend Recap: Mother's Day 2021

Mother's Day in a pandemic is about the same as it was pre-pandemic....and I wouldn't have it any other way. From waking up and enjoying the first cup of coffee from the comfort of my bed, to hearing the kids making me a yummy breakfast, some traditions were just not meant to be broken or altered! 

We had our super amazing breakfast, then hubby went to bed (he had just come off a night shift and had to be back at work later that evening), and I had some quiet time which is always a bonus in my books. 

I can't say I did anything exciting during my time alone, but sometimes making a homemade detox tea and watching some HGTV are all I need to relax and unwind. What's in my detox tea you ask? Well usually it's just some hot water, fresh lemon juice, a chunk of fresh ginger, and a sprinkle of cayenne pepper OR a small dollop honey. But this time I nixed the cayenne and honey, and added a mint leaf. It didn't taste great (too strong with boiled water) so I'll save the mint leaves for cold water instead.

Quiet Time and Detox Tea After a Large Breakfast

In the afternoon I convinced the kids to go on a nature walk with me...I had to bribe them with hot chocolate from Starbucks. It worked, they indulged me in some family time and it felt so nice to get out of the house. I'm finding that now that I work from home, and we're in a lockdown, I never leave my house. I didn't realize how much I needed to get out! Anyone else feel that way?

We finished off the day with some homemade pan pizza (and wine for me). Sooo good, and now we're obsessed with making pizza! I am sure homemade pizza will now be a staple at our house from now on!

Who knew pizza baked in a cast iron skillet would be so tasty!?
